What is a ServSafe Proctor?
A ServSafe Proctor is a certified professional authorized by the National Restaurant Association to administer the ServSafe Food Manager Certification Exam. Proctors do not teach the course — their role is to verify the identity of the candidate, maintain exam integrity, and submit results to ServSafe for official scoring.
To sit for the ServSafe Manager exam, you must have a proctor present — either in person or via an approved online proctoring service such as ProctorU. Proctors are independently certified and may work independently, through a restaurant association, or through a corporate training department.
Proctor fees vary — typically $25 to $75 per candidate — and are separate from the cost of the exam itself. Many proctors offer group sessions for businesses that need to certify multiple employees at once.
What is a ServSafe Instructor?
A ServSafe Instructor is certified to teach the official ServSafe Food Manager course — the preparation that leads up to the certification exam. Instructors deliver the curriculum developed by the National Restaurant Association, covering food safety principles, foodborne illness prevention, temperature control, allergen management, and sanitation procedures.
Many ServSafe Instructors are also certified Proctors, meaning they can both teach the course and administer the exam in a single session. This is common for on-site corporate training — a company hires an instructor/proctor to come in, train the staff, and test them the same day.
Instructors offer classes in a variety of formats — in-person classroom, on-site at your business, or online via video conferencing. Class sizes typically range from 5 to 30 students. Some instructors also offer private one-on-one instruction for managers who need flexible scheduling.
Do I need a proctor, an instructor, or both?
It depends on where you are in the process. If you have already studied for the ServSafe Food Manager exam and feel ready to test, you need a proctor only — someone to administer the exam and submit your results.
If you or your staff need to learn the material first, you need an instructor — someone who can teach the ServSafe curriculum before you sit for the exam. Many instructors are also proctors and can handle both in a single visit.
